First, the name. In an age of linguistic change, the sign saying “Chairman’s” seemed somewhat out of place—perhaps even antiquated. Well, it is. And the second we walked through the door, we knew why. There was the famous fedora hanging on the wall, and the familiar songs playing through the space. Yes, this is the Chairman’s steakhouse—the reference being to Frank Sinatra. And what a delightful job the designers have done blending the 1950’s Las Vegas feel with current styles and colours.
The service was wonderful, with touches like the “meat platter” to show off and explain the various cuts of meat, and the providing of a subtle cloth and soda water when one of our group—with the usual Dawson sense of grace and class—dribbled a little sauce on their clothing.
And the food? Perfectly cooked and plated. But don’t let the goodness overwhelm you. The portions are large, so please do not image you will need two sides or extras of anything. Start small, and add later, if you are able.
This restaurant also recalls the olden times in another way. They have a dress code, reminding us of when we first arrived in Calgary, and many restaurants kept sports jackets and ties for those dressed “improperly". Here it is simply a reminder that to maintain a “traditional fine dining experience", business causal attire is encouraged. Though more informal dress is allowed in the lounge and lounge side patio to make all feel welcome.
Also, children under that age of 10 are not permitted, though Grant was allowed in when strict parental guidance was promised.
All in all, this is a welcome addition to the Calgary food scene.
